Put your chef’s hat on!

No trip to Morocco can ever be considered complete without experiencing the country's deservedly famous cuisine, and many of our guests are inspired by the colours, flavours and smells that make a trip to North Africa so memorable. We're offering cookery lessons and demonstrations popup: true so you can learn to re-create just a few of these magical dishes when you return home. Moroccan cuisine varies from region to region, and in the Atlas Mountains the food is a fascinating mix of spices and flavours. A common and extremely versatile dish is briouat, a thin pastry similar to fi lo pastry (but easier to work with) that can be baked with a variety of savoury or sweet fillings. The dish can serve as a quick snack, starter or a delicious dessert.
Our head chef Lee, and his Berber team invite you on a 2-3 hour culinary journey, giving you hands-on experience so you will be confidently able to prepare a selection of briouats (filled with fish, spinach and ricotta and mixed vegetables), aubergine zaalouk, courgette salad, vegetable couscous and the centrepiece a chicken tagine. At the end of the sessions you'll then eat what you've prepared for dinner, accompanied by selected Moroccan wines. The cookery lessons will take place in the kitchen just off the main pool terrace in the winter and on the main building's rooftop terrace in the warmer months.
