September sees the start of apple season at Kasbah Tamadot. During this time of year, over 500 thousand tonnes of apples are cultivated across Morocco, which means there are a huge number of apple varieties to choose from. For example, the Asni apple is not particularly sweet so makes a perfect accompaniment for eating alongside more savoury foods such as meat and fish. Nevertheless, they can also be cooked to create a mouth-watering apple cake!
Our head chef, Benoît, is from Normandy in France and he absolutely loves apples! They are a really versatile fruit which means from a chef's perspective there are lots of exciting, and of course delicious, things you can create with them.
To celebrate, our chefs have been busy developing and perfecting a number of tempting apple-based dishes for guests to enjoy throughout the month. The dishes will be available on our standard and buffet menus on Tuesdays, Fridays and Sundays. And if that wasn't enough, our bar staff have been busy creating a new champagne apple cocktail.

Dried apple and wild fennel crumble, creamy and spicy fish sauce

If you have been inspired to create your own apple-based dish, you are in luck! Benoit has shared his special recipe for creating one of his favourite desserts, an apple marble cinnamon cake. Feel free to print out a copy of the recipe below and create one to share with all your friends.
Apple Marble Cinnamon Cake
Serves 6 people
Butter 250 g
Sugar 250 g
Eggs 250 g
Flour 250 g
Corn starch 250 g
Red apples 1 kg
Cinnamon powder 3 g
Brown sugar 10 g
- Peel the apples and cut into big slices.
- Mix with the brown sugar and cinnamon powder in a bowl.
- Soften the butter and mix with the sugar and cinnamon.
- Add the eggs to the bowl and whip quickly
- Add the flour and corn starch and mix.
- Add the apples.
- Poor into a greased baking pan and bake for 20 minutes at 180°C.
- Once cooked, remove from baking pan and cool.
A slice of cake is tastes delicious when served with vanilla ice cream.
