Foodie Friday: Baked Asni Apple with Star Anise cookies

Asni Baked Apple

INGREDIENTS (Serves 4)

Baked Apple
1kg                       Gala apples
100g                    Brown sugar
100g                    Butter
10 pieces            Cinnamon sticks
50ml                   Water

Star Anise Cookies
200g                  Flour
185g                   Butter
10g                     Icing sugar
1/2g                   Star anise powder
Lemon zest from one lemon

METHOD

  • Preheat the oven to 160°C
  • Wash the apples and place into a tagine pot, sprinkle with brown sugar and cinnamon. Pour the melted butter over the apples and bake for 25 minutes in the oven
  • Whilst the apples are baking mix the cookie ingredients together into a bowl
  • Once all the ingredients are combined into a dough, shape into individual cookies (about 4cm in diameter) and bake in the oven at 180°C until golden brown

PRESENTATION

Put the apples in a tagine or on a roasting try and serve warm served worm with the cookies and vanilla ice cream ... Enjoy!
