Indulgent Chocolate Pave
This Valentine’s day take a little inspiration from the Babylon kitchen and whip up a delicious Chocolate Pave for your loved one… It’s sure to delight!
For the chocolate crumble you’ll need:
- 200g caster sugar
- 250ml almond
- Plain flour
- 80g cocoa powder
- 5g salt
- 140g butter (melted)
Simply mix all the dry ingredients together with the melted butter. Press into a 12inch pie tin and set in the fridge for about an hour.
For the pave you’ll need:
- 250g whipping cream
- 250g milk
- 100g egg yolk
- 500g caster sugar
- 300g dark chocolate (70% cocoa solids)
Whisk the yolks and sugar together until light and fluffy and doubled in size. Bring the cream and milk to the boil, add the egg and sugar mix and put on the stove on a low heat for a further few minutes stirring constantly.
Poor this mixture over the dark chocolate and mix until all the chocolate is melted. Put the mixture onto the pressed crumble base and set in the fridge until firm.
We this this Chocolate Pave is best served with red berries and your favourite flavour ice cream.
